what else can i put in my soup?

just made some soup - lentils, carrots, ham cubes, potatoes, onion - and it's looking a bit thin and sorry for itself. any suggestions of things to add?

boil some barley seperate and add it

or

boil a few extra potatoes and add them once soft

or

boil some split peas and add them

or

make a rue with butter and flour, same amount of butter to flour, cook flour out for 10 minutes and add to soup, stirring it in untill thick.

Boiled rice, or how about some of those very small bits of pasta (boil in water first) - you can get them in Italian delis.

Thicken it up and it will look more appetizing -

flour mixed with twice as much cold stock, milk, or water
cream
potatoes boiled to a mush and then poured in

Some croutons to finish the job.

If you ever have one knocking about, the rind of a Parmesan cheese adds a wonderful savoury note to soups.

I always freeze mine so I have one to hand to chuck in a soup or stew.

You can put anything into a soup

but to thicken up, potato, tomato puree, corn flour.

Any kind of beans - haricot, pinto, butter, bortolli, kidney, etc, will give it body as will chick peas.

If the flavour is a bit weak, a splash of wine, sherry, Worcester or soy sauce will 'taste' it up a bit as will a pinch of herbs and Knorr stock cubes - especially the chicken, ham and vegetable types will add flavour rather than trying to add too much salt/pepper to try and give the soup more 'depth'.

Love the idea of the Parmesan cheese crust as well!

Adding pasta is always a great option if its a bit 'thin' and if you really want to go to town you could make some dumplings - they make a soup into a real meal.

You can do all sorts of stuff with them - herby, herb and garlic, cheese. cheese topped, spicy, veggie, curry, leek, onion - you can really use your imagination to suit the occasion!

thicken your soup by grating in some raw potato and carrot during the cooking process
