Chilli question

Ok so I have a plant with loads of fresh chillis on.

Anyone know a simple recipe to pickle them so they don't go off? I am not keen on them raw so pickling them to make them softer would be ideal.

Anyone able to offer a simple way to do this?

600 gm medium green chillies
15 x black peppercorns
5 x bay leaves
2 tbl coriander seeds
5 tsp salt
6 x heaped tablespoons caster sugar
1 lt white wine vinegar or rice vinegar

Method :

* For this recipe you must buy perfect green chillies without any blemishes (you can use red chillies but they will be slightly hotter).
* Carefully score from the stalk end to the tip on one side only and remove the seeds (use the handle of a teaspoon for this).
* Pour boiling water over the chillies let them sit for 5 minutes then drain.
* This will get rid of most of the seeds left behind.
* Next put your black peppercorns bay leaves coriander chillies and salt into a large jar or other airtight container.
* Put the sugar and the vinegar into a pan and heat until the sugar is fully dissolved.
* When this is quite hot but not boiling pour it into the jar with the chillies. Allow it to cool down and then put the lid on put into the fridge and leave for a minimum of 2 weeks before using.
* They will keep in the fridge for at least 4 months.

I will half that recipe as I only have about 300g of chillis.

When I pick my chillies I pop them straight into a freezer bag and freeze them whole, then when I need them for cooking I get one or two out the freezer and chop them up, there is no need to defrost them:0) They last ages this way.

Was it a sealed freezer bag?

I froze some but not in a freezer bag.
I may have gone wrong choosing to defrost them because when I did they were all slimey inside. The flesh was fine so I cut it in half and scraped out the seeds and pith.

Second time I deseeded and scraped them first then froze them and they were fine.

I put them in a freezer bag, got most of the air out and tied it at the top, I also chopped them while they were still frozen as it was easier but they defrosted very quickly, even before I popped them in the pan. No slime or anything. Maybe try putting them in a freezer bag, ziplock ones are best
