I want to make a prawn risotto for OH tonight, can't get out to the shops but have the following ingredients available. Any ideas as to which to use and not use and also the quantities to throw together a recipe.

basic ingredients available:

jumbo prawns
king prawns
little prawns
200g risotto rice
stock cubes (chicken, vegetable and fish)
1 clove garlic
a few small onions
a few shallots
spring onions
fresh ginger
fresh chillies (green and red)
1 fresh green pepper
fresh lemon
lime juice concentrate
fresh coriander
various dried herbs (parsley, tumeric, basil, bay leaf, etc.)
+ various other condiments that might be useful
white and red wine
