What sauce could I use for Pizza base?
Vic.
25-09-2008
Usually I just spoon out some ragu sauce for the pizza base, but I've checked the larder and I haven't any. The only sauce I have is ketchup. I have a tin of tomatoes, but I don't want to open the whole tin for one pizza, so could anyone give some tips on making a sauce for one individual pizza. I have some tomatoes in the fridge, that's it, no more tomato products.

Have you got a blender? Use ketchup and a couple of tomatoes.

I've got a blender and plenty of dried herbs and spices, just name them

I don't know I'm not mad on herbs! I would just do it with tomatoes, maybe ketchup and chilli or paprika.

If I were you though I think I would open the tin of tomatoes and use the rest up tomorrow.

Use oregano if you have it, or marjoram & basil. Garlic? Black pepper?

Or make a sauce with the tin of toms mashed up with any of the above + a bit of olive oil. What you don't use you can have tomorrow with pasta or freeze it until you need another pizza or some pasta sauce.

Have a nice tea!

I would just open the tin of tomatoes and blend them with some oregano and marjoram.

Is oregano and marjoram more important than Basil?

If you using the toms and ketchup I would sprinkle a few grains of sugar in to take away the bitter taste

Tomato Puree is a good store cupboard ingredient. I've made cheap pizzas using just that on a stottie covered in cheddar and onion

Whenever I do make my own pizza I love to put either BBQ, sauce, brown sauce or mayo as a base topping instead of the norm tomato.

My fave - brown sauce, cheese, onion, sweetcorn. Its delicious!

Tinned toms are good, drain the liquid though. Blend the tomatoes, add a tsp of english mustard, salt, pepper, and maybe, puree a slice or two of onion. Add the puree'd onion to the tomato, blend again, and slap it on your pizza base.

Works chuffing well on Ciabatta bread with some grated cheese, butter fired onions and mushrooms, and cooked, smoked bacon (roughly chopped). Layer it on the bread, top with some more of the tomato mix, and top with grated cheese. Season, bung it in the oven for about 15 mins.. DELISH!!
