Something different to do with chicken please!

I'm after some ideas on something different to make tonight.

I've got 4 chicken breasts in the fridge and the usual garlic, onions, peppers, honey, ginger, lemons, limes, peppercorns, rice, pasta, mayo etc etc

I followed a recipe for honey and ginger chicken a couple of weeks back but the marinade was hellova runny and never stuck much to the chicken although the taste was pretty nice.

Anyway - a challenge for you all if you can help me

Could anyone give me an idea or recipe for something to make with my chicken for tea tonight please?

personally i enjoy a good fajita, i would slice up the chicken, cook it with some fry light, add in some plummed tomatoes and 3 tsps of tomatoe pesto. personally i am not a fan of peppers however alot of people are so you can cook it all with peppers if you have them.

Warm up the fajita's and you can always have a nice salad and condements of your choice really, soured cream, mayo or créme frais is always good. Also some grated cheddar goes down nicely with it.

I like fajitas too!! So easy - I don't actually like tortilla's though so have mine in wholemeal pitta (I guess that makes it a kebab LOL).

I would dice and fry the chicken in a few herbs and lemon juice. Then fry up peppers and onion.

I also make my own salsa add that and some grated red leicester to the "fajitas".

Or else you could pick up some noodles and have a stir-fry. Or cheat and pick up a stir in sweet & sour / blackbean sauce - cooks the breast add some extra veg and sauce!!

Or else pesto chicken works too - cook the breasts in the oven and a few min's before they are ready take them out and smother in pesto.

Are you at work at the moment? You could pick up some lemon grass, coriander and chilli on your lunch break and make a thai green chicken curry?

I threw some chicken, peppers, garlic, onions and ginger in a pan and added soy sauce, corn flour and water once and it was a lovely chinese style dish, you could serve it with rice or noodles.

Fajitas are good too, but I'd do them dry, with the chicken, peppers and onion, maybe a bit of garlic. Add some cayenne, oregano and cinnamon and maybe some paprika, and top with lime juice when they're cooked.

I should stop looking on the food forum, I always end up really hungry

I would make a long slit down the length of the breast (so you can open it out) and then I would make a stuffing by adding the onion, ginger and a dash of honey and lemon to breadcrumbs then wrap it up and secure with string/cocktail sticks - weigh the whole thing so you know how long to cook it for and stick them in a large roasting pan - about half way through the cooking time for the chicken I'd either chuck in plain or rice stuffed peppers then I'd drizzle the whole lot with a a honey lemon and oil mix.

I often make up some fresh breadcrumbs whizzed up in the processor with some dried basil and oregano along with some salt and pepper. Then dredge in flour and egg before finally coating in the crumbs. Roast off in some hot olive oil for 25 minutes at 200 fan, turning halfway through. I'd serve with mash and a green veg and some sweetcorn. Maybe a little gravy on the side.

Good call.

Alternatively, get a tub of ricotta, a bag of spinach and some parmesan. Cook spinach, mix with ricotta, parmesan and herbs.

Spoon some onto the bashed breasts, roll up, then roll in 2 pieces of parma ham. Secure with cocktail sticks if needed. A quick brown in the pan, then in the oven on 200C for 20-30 mins until the chicken is cooked.

Alternatively, kebabs.

Skewer chicken pieces, onions and peppers (it's nice to add chorizo and top with a piece of halloumi. Grill and you could baste with your honey and ginger marinade (if you're not using chorizo). Serve with the rice.

A really simple and quick recipe is to cut the chicken into longish chunky strips and roll in spiced flour then fry in butter, really scrummy. I then like to drizzle the burnt butter on some rocket but you can make potatoe wedges or do some rice to go with it.

The other thing is a chicken risotto but you'd only need about 2 chicken breasts for that.

I make a variation with a few tweaks and pancetta or bacon wrapped round the chicken before the pastry. Yum!

Chicken with Ginger Honey and Lime

1 inch ginger, finely grated, 2 tablespoons honey, 2 tablespoons soy sauce
zest of two limes–juice of one lime, 2 garlic cloves, crushed
4 skinless chicken breasts

Mix ginger with honey, soy sauce and the lime zest and juice. Add garlic to the bowl.
Add chicken and mix together well.
Spread out in foil-lined or ceramic baking dish and bake 20 minutes at 220C or 400F. Turn over halfway through cooking and baked until cooked through.

Serve with rice, noodles or mashed potatoes.

I cook chicken every weekend and I do try to come up with some new and interesting ideas. Here is one:

In a deep pan quick fry sliced leek and shittake mushrooms. Remove them from pan. Brown chicken pieces (I used 10 boneless and skinless thighs but breast would be as good) and add leek and mushrooms back to the pan. Now the unusual part - add whole bottle of white wine (I used South Australian Risling) and season well. Cover and simmer for about 40 min. I added double cream just before serving and served with mash potatoes and salad. Awesome!
