Recommendation on what to cook for Dinner
chib
27-09-2008
Hi All,

I have 2 OAPs coming to mine for dinner and I still have no idea of what to prepare. I ve been thinking of going for Salad and bits for starter , spaghetti bolognaise , and non bake cheesecake but it sounds a bit boring.

Also thought of Salmon (My Godmom loves Salmon)with honey and mustard sauce with maybe mash or roast potatoes. I ve tried a trial run but I didnt like the honey and mustard sauce

Could someone recommend me something to cook that is not complicated but sophiscated at the same time

Cheers

There's a nice Lemon Butter Baked Salmon, Tagliatelle and Parsley recipe here -

The Seared Salmon with Hot Potato and Tomato Salad on the same page looks yummy too.

Hi chib,
salmon sounds lovely, I smear a bit of pesto on top and bake then serve with new potatoes and steamed veg, its very tasty.
Seeing as they're oap's it might be a good idea to check if they have any special diets like low cholesterol/diabetes management etc

Two OAP's and spaghetti bolognaise sounds a potentially messy combination....
All OAP's like mash though. I'd go with the salmon and a simple lemon mayo or watercress sauce.

Maybe stick with the Salmon and go for a simple honey soy dressing, you don't need much 2tsp soy and one of honey drizzled over two fillets will let the Salmon flavour shine through and do the talking! Be careful not to overcook them, light grill/low oven.

You could serve with steamed veg and creamed tatties - make the tatties look more impressive by pressing them into a biscuit cutter shape and topping with the veg or even some quick caramelised onions then drizzling with any juices from the Salmon pan.

For a starter (especially if you've got something like the Salmon which will require your attention a fair bit just before serving) I'd go for something you can make up now and whip out already done - salad is good and you can make it look more impressive by arranging it artfully on the plate - for example you could mix up your honey mustard with some mayonnaise and mix through some shredded chicken, place that in a little pile in the centre of the plate (top with a cherry tomato cut into an interesting shape) then circle with a ring of lettuce leaves, then scatter some cress and/or croutons over the top and wrap so you can leave the made up plates in the fridge.

Some alternatives would be melon balls with mint or a nice soup, carrot with coriander is delish and is amazing with a swirl of single cream and a little pile of fresh coriander chopped on top.

For the cheesecake, jazz it up by topping it with fresh berries and pour a simple red jelly glaze over the whole lot - wee individual cheesecakes also look far more impressive than they actually are (I use washed out tuna cans lined with tin foil as cases to make them as I don't have ramekins the right size!)

How about doing a plain good old English roast?

If they are OAP's on a budget, they probably live off minced beef.
A nice leg of lamb, or a rib of beef with all the trimmings would probably be a great treat

Why would older people eat any differently to anyone else? My parents are both over 65 but they haven't changed how they eat. They're also perfectly capable of eating spaghetti bolognese.

I don't think your original menu sounds boring at all. It's a good, solid, classic sort of meal. You can jazz it up a bit, I'm sure.

How did it go, anyway, and what did you make?

Just finished dinner and I would like to say it went down very well. A big thank you for all your suggestions. I went for the following

Carrot Soup
Baked Salmon with tomato and potato salad
Orange Cheesecake with Raspberry and Blueberries

all washed down with red wine
