Curly Kale

For the third week running our veg box has included curly kale. Other than using it as a cabbage substitute in my ribollita (last week's solution which only used up about half of the amount sent) does anyone have any suggestions as to what I could use it in? I'm not to keen on it just steamed.

Bubble and squeak? That's the only thing I can think of, never used it myself.

In the past i've chopped it up to go in curry which is nice. Also last week i chopped it into thin strips, then steamed it and laid it on the bottom of the plate for a casserole or chilli type thing to sit on. Didn't even have rice or potato to accompany with it then.

You can make Colcannon with Kale. Basically a variation of Bubble & Squeak.

Yes, I always fry it - with onions and garlic is nice. I have also used it in bubble and squeak.
You can also make a curry with it - just follow a recipe for cabbage curry.
It has a strong flavour, so should be used sparingly if you want to put other vegetables with it though - otherwise it does tend to drown them.

Thanks for all your suggestions. Have to admit, I don't eat curry (something to do with the tumeric I think) and I am getting a bit tired of bubble and squeak. We seem to have ended up with an awful lot of cabbage this year. I'm really liking the idea of stir-fry. It's been a while since I had a good veggie stir-fry. And the base for a chilli sounds lovely. I think I'll try it on Wednesday when I need to make something to slow cook anyway while we are at our dance class.

It is quite nice stir fried as a veg - a lovely nutty flavour. But you have to remove the thicker stalks first.

I steam it with carrots for my poorly old dog,with rice cooked in stock added to meat/fish...it`s a strong flavour ....but it all does her a power of good

Fry for 5 mins in nut or wok oil, add cumin seeds part way through.
You have no idea how good this stuff is for you!!! It's cheap too if you buy from farm shops!!

Just to say, the kale with chilli idea was inspired! We had it last night and it was lovely. Thank you, whoever hey. I'm now planning a big stir-fry for lunch. We might actually get through everything they sent this week!

Thank you! Thats good to hear Funnily enough were doing the same thing tonight again but with curry. Some other cabbage too thats not mentioned in the veg box list.

Fry up some chopped bacon;
Sweat off some thinly sliced leeks in a bit of olive oil until tender;
Add trimmed up kale to the cooked bacon and cook to desired tenderness;
Add the leeks to the bacon and kale and toss.
Season to your taste, keeping in mind the saltiness of the bacon.

This is also good with ham instead of bacon as well. Yum! I like to make it for a light lunch at work.
