I thought VWS were the first to perform in series 1? With Roberta being third? Although the "pretty blonde female" thing is always a tough sell. Steve had his sore throat and 2 To Go had an incredible sob story.

It's a ratings thing. They have 12 acts, 4 or 5 of them will be firmly implanted in the viewers minds. If they all go out at the start and you are left with Eoghan, Scott and Girlband to finish the show, then the ratings dip towards the end (when they should be rising). So you keep "the best to last". This also performs the function of leaving a good impression and bringing viewers back to the results show.
Taking BGT as an example, the last act was always the most popular (before the show) and they were always good. But then they often assigned the second best in the second segment of the show. That means that at the first ad break, they could lure viewers back by promising them what was coming up next.
Very few acts have performed last and not been praised. Good TV rarely happens by accident or random selection.
But ultimately they do share out that final slot. Laura/Alex won't be singing last every week. But whoever does get that position will give a good performance.
To add to the above, we have already seen the producers "building to a climax". The judges houses episodes reserved Cheryl's category to last because it was the one with the most interest. Auditions shows also typically finished with a stand out audition (be they good or shocking like Ariel).
