Caramelised onions

Really quick question I hope someone can answer for me here.

I want to fry onions really slowly so they caramelise. Is it best to add a little sugar or honey to help get them started and if so what's the best thing to use?

Yeah you could chuck a bit of demerera in there - not loads though.

I always find they taste so much yummier when I've roasted them slowly in the oven, with some salt and balsamic vinegar.

Red onions, a spoonful of demerara sugar and a slug of balsamic vinegar

Yup thats how I do them, I only use a level teaspoon though so they aren't overly sweet.

A big knob of butter is all you need. You do have to leave them for at least an hour though, maybe an hour and a half on the lowest heat to bring out the natural sweetness. Right at the end I add a slug of Madeira or Marsala and bubble up untilreduced and sticky.

Or if time is short, slow saute thim for 10 mins then just use a dollop onion chutney or marmalade

or fry onions, add sugar and red wine leave stewing for 1 hour.
A great bbq side dish.
