Belly Pork/Onions/Roasted carrots

Oh heaven.

I know I've posted another thread about find recipes that are slimming, but this is my blow out!!

Yummscious!!! Is ther anything more tasty than belly pork, well cooked with roasted veg and onions!!

I like lean belly pork (or spare rib pork chop) dipped in beaten, seasoned egg then rolled in parsley & thyme stuffing straight from the packet, then popped in the oven (not too high a temperature). I give the pork a good smash with the steak hammer first.

Haven't had it for ages though. Seem to have trouble finding parsley & thyme stuffing mix these days, although I did find a parsley, thyme & lemon one that didn't taste too nice.

Belly pork is the best cut for roasting I think (and cheap if you're affected by the credit crunch).

I roast mine on halved onions, the juices of which I then use to make gravy, and serve with dauphinois potatoes, the roasted onions, peas and apple sauce.

please tell - i saw some belly pork in the shops today and was tempted... i had belly pork with sweetmeats* as well at a posh restaurant once and would love to know how you cook it to nake it taste good because you just reminded me.



*which i thought was bollock and thought i was being brave but now i know better - it was still nice though!

Sweetbreads you mean? I had a huge argument with someone at work who insisted it was testicles, until I turned to the power of Wikipedia!

same thing isnt it sweetbread/meat?

anyway yes. i was out for a birthday and sweetbreadmeat was on the menu and a friend and i said "i will if you will" thinking they were nackers. it was only when we got back and looked them up we found out that is a common misconception.

They were nice though.

I've only ever seen them called Sweetbreads on menus.

You are right though, lovely things.
