Mrs Beaton's Egg Nog.
1 egg white
1 tablespoon brandy or sherry
1 tablespoon cream
castor sugar to taste.
Put brandy or sherry into a tumbler., add the cream and a little
of the sugar and mix well.
Whisk the egg white to a stiff froth, stir it lightly into the contents of the tumbler, check sweetness and add more sugar if necessary,and serve.
Hot Egg Nog.
1 egg yolk
1 pint of milk
1 tablespoon castor sugar
1 tablespoon whisky or brandy.
Beat egg yolk and sugar well together, then stir in the whisky or brandy.
Bring the milk to boilling point nd pour over mixed ingredients, stir well and serve.
Mulled wine.
1 pint red wine
1/2 pint of boiling water
sugar, nutmeg and cinnamon to taste.
Heat wine to almost boiling point, add the water sugar and spices. Serve hot.
I always add slices of orange, cinnamon sticks and cloves to mulled wine if it is being served in a punch bowl, it looks more festive.
