mini cheesecakes help needed!

I am planning on making some mini cheesecakes for a christening buffet thats coming up this weekend.

I have a great lemon cheesecake recipe already which has been tried and tested with great results, but i have only ever made a large cheesecake from it. I think it would be more practical to make mini cheesecakes and they would also look cool.
The only problem is i only have a muffin baking tin to make the small ones in - would the cheesecakes be ok if i placed them in muffin cases? Has anyone done this before? (They would be cooked ban marie style in the oven)

Is there any other way of doing this?

Can you not buy some cooking rings? This kind of thing. Think you can get them cheap in most cooking shops. Then, instead of doing them in a bain Marie, you can just put them on a baking tray and have a roasting tin full of water on the shelf beneath? That's what I would do anyway. You should get a blowtorch too so that you can take the rings off nice and easy.

Can't you just make a big one as you normally would, and then tastefully cut it into smaller pieces?
