Duck breast cooking ideas.

So I bought a duck breast in Sainsburys today and now I'm wondering what to do with it.

I am slightly limited by my not so great cooking facilities, I have the following - a convection oven (the grill and microwave parts don't work, just the oven bit), two electric hobs, a george foreman grilling machine thing, a cheese toasty maker, a toaster and a kettle.

Am thinking about pan frying it and finishing it in the oven, but not sure what to have with it.

All ideas welcome.

I used the cold start method.
Make a few slits in the skin.
Put skin side down in a cold pan.
Put on to a low-medium heat.
Cook until skin is golden.
Turn and seal the flesh side then either turn off heat and let gently warm until the breast is cooked through or put into oven to finish off.

As above for the duck .....

Various sauces you could make, blueberry and wine sauce tastes good with duck.

Cut up onions finely, saute in pan with butter, add cup of red wine and leave to simmer until it is reduced, add blueberries to pan and leave to reduce into a syrupy sauce...... season with salt and pepper.

I had duck last night. I forked the skin and rubbed salt on and roasted in the oven.

I made some boiled rice and salad. I fried a few onions and added some hoisin sauce to it. I just made up wraps with mayo....deelish!

Make sure you don't cook it well done, Duck should be served pink.
