I was about to make this thread. I'm about to make some cupcakes. I've been inspired by the Gourmet ones, various blogs and an episode of Good Eats that I saw.
I figure I'll go for the Chiffon cake method as it produces a lighter fluffier cake although not as rich as butter cakes it'll be fine as they are ultimately delivery methods for Buttercream icing. Problem is I can't find a British recipe for chiffon cake, only US ones.

Plus I can't seem to make my mind up on which buttercream recipe to go with. I'm kinda leaning towards the Meringue-type buttercream over the simple ones I grew up with but it'll come down to whether I can be bothered or not on the day.

If ever I won enough on the lottery I would open some kind of cupcake enterprise

Seriously though - I am obsessed with them, I think they are the perfect sweet treat and would love to the chance to get really creative in making them.

In all honesty I don't make wonderful cupcakes, I am not nearly as creative as I would like to be but that's what I would love to do with my time

They were in a shop in Beverly Hills, USA. Cupcakes are huge over there now since Oprah featured some on her show. These are the ones tat were on her show:

I think from an aesthetics point of view the meringue type icing looks better, but tast wise, you can't beat proper butter cream!

I saw a recipe for red velvet cake that looked divine, I reckon that a cup cake version of that would be ace. You could google it?

Yeah I think I saved the recipe for the Red Velvet Cupcakes somewhere from a food blog site, I also just found one on Youtube that has cream cheese frosting mmm!

The Red velvet cake is a Very strange cake, some have beetroot and others just have red food colouring anything to make it red I guess.
Anyway I think I'll give that a go around Christmas so I can easily offload some of them onto friends and family.

Yea, I have tried them both, as well as most other foods
Traditional buttercream always comes out top for me!

cupcakes are an American pasttime. We didn't need Oprah to promote further awareness of them.

Yes and no.

I suppose it depends on what you think either are. Put it this way, the fairy cakes I ate as a child were never quite as generous or fancy as the American cupcakes I've seen so I guess I see them slightly differently but I guess most people think they're exactly the same.

how about using cream cheese frosting/icing instead?

Ina Garten uses it a lot, and Rachel Allen made an orange cream cheese icing for a carrot cake -- looked scrumptious

Oh for sure, the fairy cakes I used to make certainly didn't have lashings of buttercream icing or decorations like the cupcakes you can buy hes days.

What I should have said really is, is the cake batter mix the same? All the recipies I find for cupcakes are American and therefore in cups so I just wondered if a fairy cake recipie was the sam thing?

There's no agreed upon recipe for cupcakes. Pretty much any cake batter will work. I'm set on using an egg foam one cause I want lighter fluffier cakes but it's just a matter of personal taste.

My favourite cupcakes are plain vanilla ones. I prefer to make a simple cake and go a bit crazier with the frosting.

Nigella's recipe is a good one:

125 g unsalted butter
125 g caster sugar
125 g self raising flour
2 eggs
2-3 tablespoons milk
1/2 teaspoon vanilla

(I double all this usually)
blitz in food processor and bake in cases for 15-20 mins at 200C


My favourite is the Magnolia bakery one though, they seem a little bit denser and softer:

1 cup/225g unsalted butter
2 cups/450g sugar
4 eggs
1.5 cups/225g self raising flour
1.25 cups/200g all purpose flour (I use plain for that)
1 cup milk
1 teaspoon vanilla

same process, 20-22 mins at 350F (I hate American cookbooks!)

I then make frosting, depending on how I feel. Sometimes just a plain buttercream (butter & icing sugar and colouring, piped on) and sometimes chocolate buttercream, sometimes coconut, and always sprinkles or fondant flowers or glitter or something to make them pretty.
