Recipe for vegetarian 'meat' balls, burgers or croquettes - that don't require frying
I really want to find some nice veg / bean based recipes in a burger or falafel style that can be baked or better still grilled - does anyone know of any that I could experiment with?

Yes, I've got a recipe somewhere for falafels you cook in the oven. I'll see if I can find it.

Bean burgers
1 onion finely chopped 1 garlic clove finely chopped 1 tsp coriander 1 tsp cumin 5oz/115g button mushrooms 400g tin pinto or kidney beans, drained and rinsed 2 tab parlsey chopped Fry onion for 5 min in small amount of oil until softened, add garlic, coriander, cumin and cook for 1 min. Add finely chopped mushrooms and cook until liquid evaporated. Transfer mixture to bowl. Place beans in another bowl and mash. Stir into mushroom mixture with parsley and season. Form into patties and dust with flour. Brush with oil and cook under pre-heated grill for 4-5 min each side, until cooked. Koftas serves 4 6oz/175g aduki beans 6oz/175g bulgur wheat 450ml/16fl oz veg stock 3 tab olive oil 1 chopped onion 2 garlic cloves crushed 1 tsp ground coriander 1 tsp ground cumin 2 tab fresh coriander 3 eggs 125g/41/2oz dried breadcrumbs Cook aduki beans in boiling water for 15 min, simmer for 25-30 min. Drain, rinse and leave to cool. Cool bulgur wheat in stock for 10 mins until stock absorbed and set aside. heat 1 tab oil and fry onion, garlic and spices. Transfer to a bowl, with beans, spices, seasoning and eggs and mash. Stir in breadcrumbs and bulgur wheat. Cover and chill for 1 hour. Mould into 32 oval shapes. Press onto skewers, brush with oil and grill for 6-8 mins until cooked on each side. Drain and serve with tabbouleh. |

Thanks Kim, all those recipes look great; think I'll try the beanburgers with mushrooms to start with.
Britgirl - unfortunately no Sainsbury's where I am - and most fast food type stuff you get here is all designed for deep fat fryers for some reason! |
