What to put in an omellete?

I'm a big fan of omellete, but variations of ham and cheese start to get a bit samey. What cool things can I put in an omellete that are really yummy?

My husband does one that has bacon, onion, mushrooms with optional cheese. Its delicious.

oh wait, misunderstood the question ...

garlic and mushrooms is lovely! chilli and corriander is nice too, but more for flavour than filling, so you could bulk it out with onions, tatties, and chicken.

Omelettes are good for using up whatever you have left in stock.

Mushrooms,potato,cheese,onions,prawns,curry potato,noodles with soy sauce,chilli beef,mango and icecream all make interesting fillings.

Danish salami, spring onions and mushrooms in ours tonight.

The salami is getting near it's sell by date so in it goes...probably end up with a few peppers and last nights left over peas in there too....waste not, want not!

Feta and cherry tomatoes is a nice one, or tuna, mixed peppers and sliced tomatoes.

green pepper, mushrooms, garlic, cheese, we make big thick ones finished under the grill. Or try a Kookoo, it's a middle eastern style omlette with cauliflower florets and spring onions done in the style you'd do a Spanish omlette, I tried it but fried off some Indian spices with the cauliflower instead, sounds wierd but was really nice, (not with cheese though)

Lobster and parmesan are pretty good in an omelette. Perfect for leftovers.

at the risk of soundin stupid... what do you class as an omelette? to me its just eggs whisked and fried then served! i'll add chopped ham but anythin fancier than that i just don't know how to make them into what i would class as an omelette! help!

All I do is add the different stuff when would put the ham in.

Whisk eggs - shove in frying pan - no more whisking ...sprinkle on whatever your topping is going to be.....cook until edges of egg are turning brown.....shove whole pan under the grill (I can't do runny egg at all! ) until golden brown...serve.

Knowing me, I probably do this all wrong according to how a chef would make them but it works and they taste well yummy!

I wondered where I had been going wrong all these years.

Chopped up sausages with bacon and cheese is nice

or chicken and bacon

or all of the above.

I tried chucking some chips in as well once but this was not a success
