Curry
Anyone know how to make an easy but tasty Indian curry for having friends round - without opening a jar! Not too bothered about the calories on this occasion - just want everyone to enjoy it.
And maybe an accompaniment too. |

Ok, here goes:
In a blender mix a large chopped onion and a clove of garlic into a paste. In a heavy bottomed frying pan heat some oil (preferably vegetable) and add a teaspoon of cumin seeds. Once they start to pop, add the onion paste and cook until the mixture turns a deep brown (keep an eye on it so as it doesn't burn). In the blender, add half a tin of tomatoes, a tablespoon of fresh garlic, and chillis to taste. Add the paste to the pan and also add a teaspoon of garam masala, a teaspoon of tumeric and salt to taste. Cook for another 5 mins, and then add a cup of water. Cook for another 5 mins or until slighlty reduced, and then add whatever meat/fish you like, and finish with plenty of fresh corriander. As a side dish you could make aloo gobi (cauliflower and potatoes). Heat some oil in a pan, add some cumin seeds until they pop. Add a finely chopped small onion and a clove of garlic, and brown off. Then add two tablespoons of chopped tomatoes (fresh or tinned), a teaspoon of fresh chopped ginger, chillis, salt to taste, a teaspoon of garam masala, and a teaspoon of tumeric. Add the chopped potatoes and cauliflower, and a cup of water. Cover the pan and leave the potatoes and cauliflower to cook, adding more water to do so if necessary. Finish with fresh chopped corriander. Cucumber raita also goes nicely. Empty a pot of natrual yoghurt to a dish. Thin slightly with milk. De seed a cucumber and grate a cup full of this. Add to yoghurt, and mix with salt, and half a teaspoon of garam masala to taste. Serve the above with basmatic rice and/or naan bread. Enjoy!

Indian Food made easy is currently showing on the BBC. If you have access to iPlayer then you can watch the first two episodes.
The basics are garlic & ginger, onion. Chilli if you want heat. Cumin and maybe corriander seed and tumeric and possible garam masala and also basic curry powder. Then what ever you want for the sauce such as tomatoes or coconut cream. |
