Something interesting to do with Duck Giblets

I will be roasting 3 ducks for christmas dinner. We have bought 3 from Lidl, frozen (had a frozen one from lidl last year that cost £5 and a fresh one from Sainsburys that cost £12 and the lidl one was far nicer so we have gone for them again).

They have the giblets inside them and usually because I don't have time to do anything with them at the time I just chuck them out. However, this year I want to do something with them and am looking for ideas.

I could make Pâté, it is something that all my family quite like, and I can see a duck and garlic Pâté going down quite well in my house.

Or I could make stock/gravy from it.

Anyone got any other ideas and/or recipes that I can have a mull over? I don't want to have to make it christmas day so lengthy recipes will be fine. Will probably make whatever it is on Christmas eve or the 23rd, as that's round about when we will need to take them out the freezer anyway.

I would strongly recommend making a gravy...

but I could really do with some advice on how to remove the giblets! (From the same LIDL duck - that now costs £6 - tsk)

They are just in a bag inside. They have already been 'removed' from the duck itself. They just need pulling out when you can, will probably need to defrost it a bit before they will come out.

I probably will just make a gravy from them. Cheers for the recipe.

ducks are £6 in sainsburys atm. i fed the giblets (not the neck though ) to my dog
