Cooking With Rum

So I have a lovely bottle of Captain Morgan's dark rum in by cupboard but I'm kinda getting tired of using it in such unimaginative ways. All I know is rum and coke >< so I beseech you to lend me all your recipes and cocktail ideas featuring this magnificent beverage. White rum is also acceptable; I'm needing a reason to stock up :P

Rum sour
Ingredients:

2 oz rum
1 ts Lime juice
1 oz Sour mix; bottled
1/4 c Orange juice

Instructions:

Mix together. Serve with ice. Garnish with a cherry and orange slice

Drunken Chicken

1 Free Range Chicken
4 tablespoons dark rum
Juice of 1 lime
3 tablespoons of honey
2 cloves garlic, minced
half teaspoon of salt
1 teaspoon coriander
Ground black pepper


Wash the chicken thoroughly and pat dry. Mix rum, lime juice, honey, garlic and half teaspoon of salt in a bowl. Rub the mixture over the chickens and marinade in the fridge for 40 mins. Put the bird in a shallow baking tray and pour the remainder of the marinade over it. Sprinkle the ground black pepper and coriander over and roast for 50 mins, basting with pan juices after 20 minutes. When done cut chicken in half lengthwise to serve. Great with rice and/or salad.

Rum bananas are also good - split the banana skin, pour rum over as well as a sprinkle of cinnamon and brown sugar, then wrap in foil and barbecue. When it's hot open it up and eat (with cream if feeling indulgent!).

You've missed out the most important use of white rum - forzen daquiris! Ice, blender, rum, triple sec, frozen fruit and you're on your way! Yumsies!

I used to hate gammon steaks with pineapple (tinned) when I was younger...but now that I saute diced fresh pineapple with butter, brown sugar and a generous splash of rum it goes great with a grilled gammon steak.
