Blue stilton.

I had some Danish Blue on a rib eye steak last night as I was told blue chesse is nice with it, I found it a bit minty tasting and didnt really like it

Has Blue stilton got the same taste?

I find Danish blue quite salty - Stilton is less so.

I feel the best blue cheeses to have with meat are the creamier ones, such as Roquefort, Gorgonzola and St Augur

Yeah, different people have differing tastes. I can sometimes get away with eating Stilton when it is in a recipe, just depends on how much.
