Cookie Recipes

Hi all. I fancy baking some cookies with my children over Christmas, does anyone have any good recipes? Thanks for all the replies in advance.

My favourites are Nigella's butter cut out cookies. They're really simple, and the dough freezes really well if you're not ready to use it all in one day. They hold their shape really well with all sorts of cutters, and they're nice and plain, leaving you all the fun of decorating.

175g unsalted butter
200g caster sugar
2 large eggs
1 teaspoon vanilla
400g plain flour
1 teaspoon baking powder
1 teaspoon salt

icing sugar/food colouring/sprinkles/silver balls etc for decorating

Preheat oven to 180C

Cream butter and sugar together.
Beat in eggs and vanilla.
Combine flour and baking powder and salt in another bowl. Sieve. Add the dry ingredients to the egg/butter mix and mix til combined. Or chuck the lot in a mixer.

Ball the dough together, wrap in cling film and leave in the fridge for at least an hour. This bit is important, especially if you've mixed the dough by hand; it helps the cookies keep their shape later, and makes the dough easier to roll out.

Roll out on a floured surface til about 1/2 cm thick. Cut out in whatever shapes you fancy.

Bake on a baking sheet (lined with greasproof paper if you like, but not necessary) for 8-12 minutes - they should be lightly golden. Cool on a rack. I usually end up baking in batches as the mix makes quite a lot of cookies, depending on the size of your cutters, of course.

WHen cold, make up icing (icing sugar + water + colouring) and ice away. I like to ice them all over with white, and then add hundreds and thousands, but you could always buy that writing icing in tubes and squiggle/draw all over them, or add silver balls or red and green Christmassy bits or whatever.

I love them - they're dead easy to do, and they taste lovely and light and buttery.

I get a lot of recipes off the packets of ingredients. For instance there is a recipe for Chocolate Chip Cookies on the Silver Spoon Demerara Sugar packet.
