I was asking the same question a few months ago to someone on here who jailbroke their ipod touch and I can safely say, in no way can it damage your ipod.
Apple of course do not like jailbroken ipods, because it allows people to write applications and use the full advantage/features of the device whereas with the appstore apps, Apple put a restriction on the SDK as they dont want any apps that will compete with any of their own products.
Does it void your warrenty if you jailbreak it? well of course it will if you go to an apple shop with the jailbroken ipod and let Apple see that. If for some reason you needed your ipod fixed or replaced, all you would need to do is Restore your iPod Touch through iTunes which will remove all jailbreak and put your iPod back to the way it was when you first bought it, so you will be running a clean firmware. Then you take it to the Apple shop and you will still have your warrenty.
Remember, a Restore will remove everything including the Jailbroken files so if you decide you dont want a Jailbroken modified ipod anymore you just sync your iPod Touch with iTunes and click Restore and it will Factory Restore your ipod back to clean.
