Good veggie shepherds pie recipe??
Does anyone know a nice vegetarian recipe for shepherds pie, with or without the ubiquitous quorn mince??

I just make it the same way as a meat version with the Linda M or quorn mince. I make sure I use loads of mushrooms though, some peas, and use Bisto gravy which I know lots of people don't like. I have had it made with a lentil base, with tomatoes, onions and mushrooms but that was bit gloopy and stodgy for me.

When I cook a vegetarian version of a dish that has meat in it I use lots of brown chestnut mushrooms, you can use others and chop them up randomly or I put tofu and mushrooms in a food processor, blitz them up into small pieces, fry them off with onions and to brown then add garlic when you turn it down otherwise it burns. A few drops of soy sauce or a couple of Kallo veg stock cubes are good flavourings. Can send a recipe over?

Hi, my nan used to make me the nicest vege sheperds pie (no mince). She used kidney beans and mushrooms in place ofthe mince. It may sound like a rather odd concoction - but it was delicious. She also used to grate the carrot into it (I guess becasue then it didn't need pre-cooking - so a nice quick dish. Personally - I always like courgette in dishes like that too.

I make this quite often and only takes 10 minutes to make + cooking time. I don't have a recipe as such I just bung things in and taste it until it tastes nice.
I chop an onion and carrot into small pieces, fry them with a bit of oil, add quorn, cook that for a bit then add water and a teaspoon of marmite (sometimes more, but to taste) then add some frozen peas, bring to the simmer and add a little veg gravy to thicken it up a bit and salt and pepper, then chuck it in an oven dish, I often cheat and use Smash for the topping It's the only time I ever eat it, but I add a little butter to the Smash, put it on top and then grate some cheese on top and oven it until brown.

It may well be a pie, but it's not Shepherd's pie, since that has lamb in it. It may be a sort of cottage pie.

A good dollop of tomato ketchup helps make a lovely vegetarian version.
I have used red lentils,courgettes,flat mushroom and carrots. You could swap the courgettes for aubergine if your diet needs purple coloured vegetables. I usually microwave the flat mushroom on high for six minutes. It comes out lovely. |

Some people call a veggie shepherd's pie a shepherdess's pie. But why bother - everyone knows what a veggie shepherd's pie is.
I would make a vegetable stew by softening onions, carrots and mushrooms in a little oil, then just add some water and simmer until the carrots are cooked. Then chuck in some veggie mince, or brown it first if you like (no need for oil if you use a non-stick pan), and add about as much water as mince as the mince will absorb a lot of the water that's already in the stew. Cook for a few minutes then stir in enough veggie gravy granules to thicken the sauce, season to taste and put in an oven dish, top with mashed potato and bake for 20 minutes. The only bit I have trouble with is getting the potato to sit on top without pushing the gravy over the sides. |

I make mine with quorn mince. I make it very simple, just fry some onions and the mince, then add lots of veggie gravy. Bake it in the oven with the mash, so it goes all cripsy and it's nice every time!
Even my meat eating boyfriend really likes it too. |
