Anyone know any good risotto recipes?

Preferably involving porcini mushrooms?

We were given a risotto making set for Crimbo, which includes rice and a bag of porcini mushrooms, and would like to have a go - only we don't know any recipes!

Any ideas would be gratefully received.

soften finely chopped onion and white of leek in butter. add minced garlic and fresh red chilli to taste. add arborio (sp?) risotto rice, stir buttery mixture until all rice coated. Add splash of white wine and stock bit by bit stirring all the time until all rice cooked. Takes about 20 -25 minutes, it cannot be left during cooking - keep stiring!

Your question should really be, anyone know how to make a good stock? as that is such a big factor in getting a tasty risotto.

i think i saw jamie oliver making risotto with porcini mushrooms and he reserved the liquid after soaking the mushrooms (and heating it of course) and used that as the liquid for the rice. probably need some stock too of course.

Ingredients
1 tbsp dried porcini mushrooms
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
225g/8oz chestnut mushrooms, sliced
350g/12oz arborio rice
150ml/¼ pint dry white wine
1.2 litres/2 pints hot vegetable stock
2 tbsp chopped fresh parsley
25g/1oz butter
salt and freshly ground black pepper
freshly grated parmesan cheese, to serve

Method
1. Soak the mushrooms in hot water for 10 minutes, then drain well. Heat the oil in a large, heavy based saucepan and add the onion and garlic. Fry over a gentle heat for 2-3 minutes, until softened. Add the mushrooms and fry for a further 2-3 minutes, until browned.
2. Stir in the rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has
been absorbed. Add a ladleful of the stock and simmer, stirring again, until the liquid has been absorbed. Continue adding the stock in this way, until all the liquid has been absorbed and the rice is plump and tender.
3. Roughly chop the soaked mushrooms and stir into the risotto, along with the parsley, butter and salt and pepper. Serve with freshly grated Parmesan cheese.

Yeah don't throw the porcini 'juice' away!!!
(And use a spatular to stir!)

We tried this for the first time on Thursday and it was lovely!

Definetely keep the water from the porcini - but remember to filter it before using it, because the porcini will almost certainly leave behind some mud. It will add lots of flavours.


To enrich the rice, you can also use a handful of normal mushrooms (portobello, button, whatever), salted in a little bit of butter or oil and parsley and add them to the rice before the porcini. It will make it a real Italian risotto ai funghi.

I love rice in many forms but I am the kiss of death to it. No matter what I do it all sticks in a horrible lump. These recipes sound lovely

Delia has a couple of risotto recipes where you cook it in the oven (stir once halfway) - so you should be safe with those.

Angela Hartnett (sp??) has a brilliant italian cookbook which my mum got for christmas - she made the mushroom risotto the other might and it was AMAZING and easy!! Give it a go
