Low Fat Chicken Recipe ideas to impress Mother in Law
OK so I've googled and found some recipes but wondered if anyone had any tried and tested recommendations?
Mum in law is back on the healthy eating so whereas I would normally do a roast dinner I want to do something thats still tasty but healthy. I want to do something chicken (or turkey based) - any suggestions welcome Thanks |

I think this was a slimming world recipe thats really quick and easy to do but will make your MIL think she's had a treat.
Ingredients (for 1) 1 Chicken breast 1 rasher of back bacon with fat removed 1 dairylea triangle Slice the chicken through the middle. Place the dairylea triangle in the middle and wrap the bacon around the chicken to keep everything together. Season to taste. Bake in the oven at 190 degrees for 20 - 25 minutes. Serve with lots of her favourite veg and new boiled potatoes. Easy! |

Delish recipe with chicken which I served up tonight - serves 2
2 Chicken breasts sliced through middle to make 2 thin fillets 1 orange peeled, pith removed and sliced into segments 1/2 red chilli - seeds removed finely chopped 1 tbsp coriander chopped 2 spring onions finely chopped 1/2 lime - juiced 1/2 avocado diced Simply fry the chicken breasts in 1 tsp olive oil for 10 mins - add lime juice for last minute of cooking Combine other ingredients in a bowl and serve alongside. I also added some rocket and tomatoes to make it super healthy. It's also super quick - I got in from work and it was on the table 15 minutes later! Result! |

Extreme Low Fat Sweet & Sour Chicken
A very pretty and colourful dish, not to mention delicious. I like to prepare all ingredients into little bowls and then it goes together super easy, especially the juice mixture. 3 uncooked chicken breasts, cut into strips 60 ml chicken stock (you can use Knorr stock cube dissolved in water, but just use about 1/4 of the mixture) 2 stalks celery, diagonally sliced 1 onion, thinly sliced lengthwise 1 small red pepper, cut in strips 1 small green pepper, cut in strips 80 ml pineapple juice (I just use all the juice from the tin of pineapple chunks (below)) 2 tablespoons packed brown sugar 2 tablespoons white vinegar 3 tablespoons soy sauce (I use dark) 1 tablespoon cornflour 1 small tin pineapple chunks (4 slices, cut in chunks) 1 pinch salt Fresh ground pepper 1. In a large frying pan, bring chicken and stock to a simmer over med-high heat. 2. Add celery, onion and red/green peppers; cook, stirring often, for about 5 minutes, or until chicken is no longer pink inside, and veggies are cooked but still a bit crisp. 3. Mix together the juice, brown sugar, vinegar and soy sauce until blended. 4. Add into frying pan; bring to a boil. 5. Cook, stirring for about 2 minutes, or until glossy and thickened. 6. Mix the cornflour with a small amount of cold water and add to the simmering sauce to thicken. 7. Add pineapple chunks, salt and pepper; simmer for 2 minutes, or until heated through. 8. Serve over rice. |

Here's one that I tried out when a relo was dieting and came round for din dins: http://www.megaheart.com/kit_chickenhoneyglaze.html I served with the recommended 'dastardly potatoes' and steamed carrots with ginger. It was very well received

Please don't be too disappointed if it doesn't rate highly - as I am sure my hubby will love it (I don't eat meat so can't do the commenting).
The MIL told me a couple of months ago one meal was "the finest I had ever made in 11 years" and gave it 7 out of 10!! So she's not so generous with her marking!! |

Toad in the hole with onion gravy!!!
