I was wondering if anyone could explain to me what exactly jailbreaking is - and what it involves and how one would go about doing it to free it from the shackles of apple?

How much risk is there? and is it easy?

Jailbreaking allows you to run un-signed apps etc.

There really isn't much to doing it, its very straight forward using the right tools.
