help! tuna fish cakes!
Ive made my mash and mixed my tuna and other ingredients in and its too gloopy to make into fishcakes! How can i dry it out a bit please!?

Maybe add a touch of flour, or a handful of breadcrumbs ?
Otherwise put it all in an oven proof dish, top with a mix of breadcrumbs and grated cheese, shove into the oven until bubbling and brown and call it a fish bake

right, i put a load of those orange breadcrumbs in and ive managed to make cakes - ta

This is not going to help you now, but whenever I make fishcakes I try and give myself a bit of time and chill them in the fridge before cooking. They set nicely and then they don't break up when you fry them.

I use a pastry cutter thing and compress them really firmly inside it
what do you put in apart from mash and tuna? |

It could have been because the mash was too runny in the first place. When I do fish cakes, I make the mash without any milk and just enough butter to flavour it. The fish also has to be thoroughly drained of cooking juices.
I usually have never had to add breadcrumbs or egg (which I find makes the fishcakes very heavy) although I do add oodles of herbs like dill or parsley, finely chopped. PS In these circumstances I would have turned it into a bake as well! |
