I'd sooner have an egg sandwich made from a hot hard boiled egg, chopped up in a cup with butter and lashed with black pepper, on toasted bread.

Toasted pitta, scrambled egg and chopped bacon, lettuce, onion, salad cream - mayo mix.
If it's a straight-up egg banjo then two slabs of white loaf buttered, large free range fried egg, I never flip them in case they burst, I just tip the pan and slosh the hot oil over the top to 'skin' it. Then once it's on the bread, I chop into the yolk and spread it about. Touch of salt and pepper and mmm. |

The perfect egg sandwich should be placed straight in the bin!
Horrible things. Someone in our office loves them and stinks the place out! |

Hard boiled eggs mixed with mayonnaise, salt and black pepper, snipped chives and small pieces of smoked salmon, sandwiched between lovely fresh bread. Yum, had it yesterday and have some filling left over, so will have the same again today for lunch.

The only person I've ever heard calling a fried egg butty a banjo is my Mum. Is it a common expression where you live? |

Egg mayo with crispy streaky bacon in a fresh crusty roll is the pinnacle of egg in bread for me.

Fried egg, burst the yolk. One good morning roll (not too crusty), butter, and place hot egg in. Salt. Eat. Lovely
Egg mayo on the other hand is the food of the devil (#3) - it smells like sick. Don't know why, because I like all the components |

Aha, that interests me, banjo = fried egg butty.

You've fried your egg (for full effect, the consistency of the yolk should be runny), and laid it lovingly on a slice of bread. The type of bread (including bread rolls), and whether or not it is buttered, is of little importance: it's the consistency of the yolk that counts. Having applied the necessary seasonings, you close your sandwich and take this gastronomic masterpiece in your hand. Then with no small amount of anticipation, you take your first bite. I think it's a British military expression.
If you have constructed your banjo with a sufficient degree of care and diligence, at this point the yolk will spew forth from the far edge of the sandwich and splatter its yellowness down your best pulling shirt. Transferring the fruits of your labours into one hand, you hold it to the side, and with a futile strumming action attempt to wipe the spilt and rapidly-drying yolk from your shirt. Congratulations! You've just passed Grade I in egg banjo. |

My son loves a bacon and egg sarnie. So, butter three slices of bread, put a couple of crispy back rashers on the bottom one, another slice of bread, then a fried egg, and finally the top slice. When you cut through the yolk, some of it goes onto the bottom layer as well.

First prepare 'egg in a cup'...2 boiled eggs, a big knob of your best butter plus salt and cracked black pepper all chopped roughly in a cup. Then put on a nice thick slice of buttered white toast.
Top with a couple of slices of crispy prosciutto if you're got the extra pennies to buy it! |

I love fried egg sarnies. I prefer fried egg rolls with a slice of black pudding & a dash of ketchup. Egg deffo needs salt & a wee sprinkle of pepper.
Oh god yes. Eggs and chips are probably the only things I 'salt' after cooking...it's a must! I never put salt on to meat or regular veg. |

An omelette sandwich is fantastic! Although I have to have mine on brown bread with sliced tomatoes as white bread makes me boke.
