Healthier Tagliatelle Carbonara

Okay so tonight my boyfriend is cooking tagliatelle with bacon and mushrooms. He isntgoing to put any egg, cream in it though and I said it would be dry.

As im on a diet cream and egg wouldnt be a good idea anyway. I was just wondering if anybody had any lighter, healthier recipes for the dish? I was thinking of mixing phili light in with it?

I'd use low fat Greek yoghurt (2% Total or something like that) with a squeeze of lemon juice mixed into it - it will be a bit more tart than if you use philadelphia but healthier and less sickly.

Could use creme fraiche? You'll also get told off for putting cream in your carbonara, don't say I didn't warn you!

An alternative would be to to have it 'dry' but not really - if you use a swig of good olive oil when sauteeing the mushrooms and bacon (and I'd add some garlic to this recipe too) and then stir it through the pasta and finish off with a small sprinke of parmesan and some black pepper it won't be too dry but won't change the direction of the dish and is still semi-healthy - better than a cream based sauce anyway.

Oh god, ive just been told by my OH that I shouldnt worry he has bought a SHWARTZ PACKET CARBONARA that you mix with water!

If your only concern is your diet you're better off with egg than one of the packet sauces.
For just the two of you you would only need one egg, however the packet sauce will most likely have all sorts of hydrogenated and saturated fat...

I never put cream in my carbonara - just eggs, bacon and a bit of grated cheese.

I used to make mine with that as well. It's not bad. You could also use ham instead of bacon to cut down on the sat fat.

I've never tried it, but if you're trying to be healthy but don't want it dry, could you keep a bit of the cooking water from the pasta to moisten it, like the TV chefs do quite often?

You could probably substitute crispy bacon or ham for the salmon or whatever in one of these recipes BTW

Me too - the first (and only) time I had 'proper' carbonara I nearly puked from all the cream I make a mean veggie carbonara now, with a smidge of chilli powder to give it a bit of a kick.

OP, if you're on a diet, then steer well clear of packet mixes as they're likely to be full of extra salt, sugar, fats and chemicals. It can't be that hard to avoid eggs and cream, surely?

True, in France last week I saw it served just as hot pasta with ham and parmesan, and a raw egg yolk on the side. Stir in the the raw egg and it cooks with the heat from the pasta.

Just what I was going to post. I lived in Italy for 5 years and never saw a Carbonara with cream in it. If a restaurant served me one with cream it would go right back!

I make an alternative carbonara by frying onion and smoked bacon in frylite, adding some chilli flakes, creme fraiche and grated parmesan. Yum, and takes 5 mins while you cook some pasta
