Roti Canai
Since eating this for pretty much everyday for breakfast in Malaysia last month I have severe cravings for it.
I haven't found any where that makes it near (and me and my friends have searched hard). So my question is- does anyone know of a recipe I could follow, any special equipment i need to make it and is there any chance of "capturing" the technique needed without being taught by a professional roti canai maker?

You can buy paratha from an indian or chinese shop in the freezer section. You cook them in the frying pan and although not as authentic as roti canai it comes quite close. As for the curry, I recommend that you hunt out Adabi korma curry powder in the same supermarket and use it to make the curry, that's what I do. I grind up 5 or 6 shallots, ginger, garlic and chilli into a paste and then fry it off. Mix the curry powder into a paste and add that along with some coconut milk and water and chicken pieces and leave to cook. Adabi is the mix that the roti canai sellers in Little India use in M'sia to make the curry accompaniment. Enjoy!

![]() I think I've also seen them in Tesco in London (Brent Cross maybe?) - whether they're available in your store will probably depend on the local ethnicity and how big the store is. I am lucky, my local noodle bar sells them.

I just looked at Tesco online and they have packets of Nishaan Traditional Roti reduced to 75p

Cunning, I just looked in Asda today and they have two types: plain frozen and keema stuffed frozen (the keema being chicken rather than lamb). They come in packs of four and in my Asda they are in the vegetable aisle of the frozen next to the Polish frozen and Halal frozen. Hope that helps you on your quest
