Sandwiches & potato's!
Hello!
Few questions, I'd be greatful for someone to reply thanks. Anyway, How do I make a jacket potato in the oven so that the skin of it is thick? I'm not really sure how to explain it, but if you have ever been into Fat Jackets restaurant, the skin on they potato's are just lovely! Can anyone recommend a nice tasy healthy big sandwich I can make for work? I'm sick of eating just meat & cheese etc. I'm looking for some inspiration & don't know where too look! Thanks guys.

I was curious what this was going to be about - I was thinking you wanted to eat some kind of hideous chip sandwich!
As for the questions - I get jacket skins the thickest when I slow bake them in the oven - nothing extra, but no microwaving and on a lowish heat for a few hours. Sandwiches that are healthy - raw spinach and gratted carrot are both great for bulking up a sandwich - both go really well with tuna or with houmous as well and if it's on wholegrain bread can be really filling and nutritious. Another good healthy but filling option is grilled vegetables - I like to have that in a wholemeal baguette wth a sprinkle of olives - you could add a bit of feta if you wanted as well in fact, or with houmous or some kind of vegetable or yoghurt based spread. |

You could try Muffuletta. It is meat & cheese but with a hell of a lot more inbetween
