Cat Empire. Australian band that mixes genres like ska, funk and jazz. Such a unique sound and one of the best live bands you will ever hear! Seeing them for the third time in December. Been around for 10 years now with album 5 currently in the works. And they don't even have a record deal over here, you need to import their albums.
I like a lot of unsigned acts who put their stuff on YouTube such as Jessica Chalker, Matthew Begley, Chas Rigby, Sharine O'Neill (who, despite her name, is Austrian) and Tamara Rossi.
There is also a guy who posts on DigitalSpy called Wayne Dawson who is brilliant. His stuff can be found and downloaded on Soundcloud or something like that.

Man's a genius and one of the UK's most under appreciated singer songwriters imho.
I could put a whole massive list of folk and folk rock music but instead I will just put:
Blackmore's Night - awesome tunes from Ritchie Blackmore (of Deep Purple and Rainbow fame), and his wife Candice Night based on medieval and traditional music.
