Whereas here in the UK, generally, people just fall into waiting and bar work and learn "on the job". It's not really considered to be a good job either

Exactly. I knew nothing about it and remember being shocked that he had to buy the very best quality chef's knives. It was a really difficult course for him, especially as he was and still is rebellious by nature.

I worked in a restaurant in France for a while, many years ago. I was rubbish at it, but I could carry five plates and wave them about like the guy just did then. I haven't done it in years, I wonder if I still can!
Oh god, the wine opening thing is giving me flashbacks! I was terrible when I was a waitress! I have a memory of a wine bottle where the cork just wouldn't come out, and I ended up squeezing the bottle between my thighs while I pulled the cork out. And another time, I was trying to lever the cork out, and the whole neck of the bottle snapped right off and tipped red wine all down me. That was fun.
