I've always loved Brad Fiedel's music for The Terminator and Ennio Morricone's music for The Untouchables. I saw Alien again recently and was impressed by the music for that too.
pleasantly surprised by Last of the Mohicans being mentioned. I also think the music from Interview with the vampire stands up on its own merits and the soundtrack to A single man is gorgeous.
