Love that!!
Some of the best venison I ever had was with a chocolate and red wine sauce and as some others have said chocolate can be used in chilli.
A garlic jelly would probably work. Savoury jellies can be nice, the same goes for savoury ice creams.
Not sure I could tackle sausages and custard though!
