These programmes put me off eating out when you see how much they use their fingers to touch the food on the plates then wipe the sweat off their faces and hair.

It's a strange industry. A lot of high end kitchens seem dominated by young men who are shouted at and swore at by a head chef who thinks he's great and you sometimes wonder why any young person would ever want to work in the industry. And then you get the exceptions such as Michel Roux who show it doesn't have to be like that at all.

Big mistake.
Surely the staff would like to scoff some of it even if it's cold or has to be reheated.
Could even invite family members.
No wonder as they are working 18 hours a day.
